History

Everything started in my grandfather’s little stone kitchen.

Every Sunday, it was the same ritual: flour everywhere, precise gestures and that fragrance of dough slowly rising, nurtured by time and the know-how of the past.

There was no stopwatch, no written recipe.

Just patience, and the love of doing things right.

Then came my father’s turn, in his bakery, carrying on this family tradition.

His pizza? It was an invitation to Provence: golden olive oil, sun-ripened tomatoes, and dough always treated with respect.

As a child, I would watch his hands shape the disks of dough, fascinated, already with a certainty rooted deep inside:
“One day, it will be my turn.”

On my mother’s side, Italy flowed through our veins and onto our plates.

Every summer, we crossed the border to join the family. There, I discovered what true product culture meant.

We would go to the market to smell the ripe tomatoes, pick the day’s mozzarella, and listen to the elders’ advice on the art of slicing prosciutto the right way.

Meals were never just meals — they were moments of life, of transmission.

I also remember those long afternoons in my uncle’s olive groves, under the Provençal sun.

Today, at Chez Papa Pizza, I carry on this story.

Each dough rests for 72 hours, slowly and naturally, to develop unique aromas, just like my ancestors did.

The flour comes from a small traditional mill, where stone wheels are still used, and every bag is produced 100% with renewable energy.

A dough with the true taste of the land.

And the ingredients? I go find them from our neighbors: farmers, cheesemakers, olive growers. All passionate artisans.

Short supply chains, nothing but quality, ingredients that sing with the seasons.

A pizza that tells a story.

At Chez Papa Pizza, every bite is a tribute to my family and to this authentic Provence that taught me that “good” begins with “real” — and where, all around the Mediterranean, we speak the same language: the taste of simplicity and sharing.
